Fall Apple & Cabbage Slaw
In September we say goodbye to the sweet, juicy fruits of summer, and welcome sweet, tart, and/or tangy apples. I love that there is such a flavor difference across the various types of apples, and you never really know what you're going to get until you bite in. My farmer's market is full of apples, cabbage, and carrots right now so this seemed like the perfect "ease into Fall" salad. It develops even nicer after a few days in the fridge, so you can make a big batch and enjoy it all week long!

Ingredients:

4 cups thinly sliced red and/or green cabbage

1 apple, cut into matchsticks

1 carrot, peeled and grated

1 tbsp fresh lemon juice

2 tbsp apple cider vinegar

1 tbsp honey (try our Wildflower Raw Honey)

2 tbsp olive oil

Salt & pepper, to taste
Directions:
- Prep cabbage, apples, and carrots. Toss them together in a large bowl.
- Whisk together remaining ingredients in small bowl and pour over salad.
- Toss until combined, cover and refrigerate for at least an hour before serving.
