Honey Lemon Ricotta Bruschetta

This Honey Lemon Ricotta bruschetta is incredibly versatile and so easy to whip up. You can really use any combination of ingredients on the top, but here I focused on seasonal fruits. This is the perfect summer appetizer or you can even make it into a light summer meal by using the base mixture for ricotta toast. Top with your favorite fruit, avocado, or even tomato and basil.

  • 1 cup ricotta cheese
  • 1 lemon, zested
  • 1 tbsp olive oil
  • 1 tbsp honey
  • Baguette, sliced and toasted.

Combine all ingredients. Spread on cooled baguette toasts, and top with fruit mixture.

Fruit topping:
  • 1 peach, diced or handful of cherries, sliced.
  • 6 basil or mint leaves, finely chopped
  • 1 tbsp fresh squeezed lemon 
  • 1 tbsp honey
