Honey Lemon Ricotta Bruschetta
This Honey Lemon Ricotta bruschetta is incredibly versatile and so easy to whip up. You can really use any combination of ingredients on the top, but here I focused on seasonal fruits. This is the perfect summer appetizer or you can even make it into a light summer meal by using the base mixture for ricotta toast. Top with your favorite fruit, avocado, or even tomato and basil.
Ingredients:
- 1 cup ricotta cheese
- 1 lemon, zested
- 1 tbsp olive oil
- 1 tbsp honey (Try our Alfalfa Blossom Raw Honey)
- Baguette, sliced and toasted.
Fruit topping:
- Slices or dices of your favorite fruit. Peaches, cherries, bananas, and strawberries are great.
- 6 basil or mint leaves, finely chopped
- 1 tbsp fresh squeezed lemon
- 1 tbsp honey (Try our Alfalfa Blossom Raw Honey)
Directions:
- Slice baguette into 1/2 inch slices. Toast to a golden brown.
- Combine ricotta, lemon zest, olive oil, and honey in a bowl.
- Liberally spread the mixture on the cooled toasted slices.
- For the fruit topping, toss fruit in a bowl with herbs, lemon juice, and honey.
- Spoon the fruit mixture onto the toasted slices with ricotta mixture.
- Serve immediately for freshness.
