Blueberry Honey Jam
This jam is super simple to make, only using 3 ingredients, and tastes way better than any store-bought jam! My family enjoys it over pancakes or waffles, on buttered toast or scones, on a cream cheese bagel, and over vanilla ice cream! I even like it dolloped on top of grilled chicken, and for an easy fancy appetizer, spread some goat cheese over crostini and top with the jam. Whip up a batch with your fresh Spring blueberries and get creative!
Ingredients:
- 1 pint blueberries
- 1/2 tsp lemon zest
- 2 tsp lemon juice
- 3-4 oz honey (Try our Blueberry Blossom Honey)
Directions:
- Wash blueberries and make sure all stems are removed.
- Place all ingredients in a medium saucepan over medium-low heat, crushing the blueberries a bit as they cook down.
- Once the mixture is thickened and reaches 220°F on a candy thermometer, remove from heat and place into jars to cool. Once cooled, cover with an airtight lid and refrigerate. It will keep for 3-4 weeks.
