  Ingredients:

  • 2 Tbsp. salted butter

  • 2 (10-oz.) pkg. frozen corn, thawed or 4 1/2 cups fresh corn kernels (from 5 ears)

  • 2 oz. (about 1/4 cup) cream cheese, cut into pieces (from 1 [8-oz.] pkg.)

  • Tbsp. Astor Apiaries New York City Raw Honey

  • 1/2 tsp. kosher salt

  • 1/4 tsp. black pepper

  • 2 Tbsp. thinly sliced fresh chives or scallions, plus more for garnish

Directions: 

  1. Step 1. Cook corn: Start by heating the butter in a large nonstick skillet. Add the corn to the skillet and cook until it's tender, while stirring occasionally as you go.
  2. Step 2. Add remaining ingredients: Add the cream cheese, honey, salt, and pepper. Stir often while continuing to cook until the mixture is creamy. Stir in the scallions or chives.
  3. Step 3. Garnish and serve: Last, transfer the mixture to a serving bowl and add additional herbs for garnish.
  4. Serve the dish immediately, or make it ahead: Honey-butter skillet corn can be made up to three days ahead and then reheated before serving.
